רולדה משובחת

לצורך הכנת הרולדה המושלמת שבתמונה, נצטייד במצרכים הבאים:

לבסיס הרולדה:

5 ביצים
חצי כוס סוכר

2   שקיות סוכר וניל
3 כפות קורנפלור

למלית:

250 גרם שמת מתוקה

שתי כפות אבקת סוכר

שתי כפות אינסטנט פודינג ווניל

כפית מחית ווניל

200 גרם אגוזי מלך מרוסקים

לציפוי (גנאש):

200 גרם שמנת מתוקה

400 גרם שוקולד לבן

כף דבש

שנתחיל להכין? קדימה:

מפרידים את חמשת הביצים לחלמונים וחלבונים.

בקערת המיקסר מקציפים את החלבונים ומוסיפים את חצי כוס הסוכר לאט לאט עד לקבלת קצפת יציבה.
בקערה נפרדת ובעזרת מקצפת ידנית מקציפים חלמונים סוכר וניל  וקורנפלור עד לבלילה חלקה.

מקפלים את שני התערובות לבלילה אחת.

מניחים נייר אפיה בתבנית, מרססים כמות נדיבה של ספריי שמן  ויוצקים את הבלילה מעל.

מכניסים לתנור שחומם מראש על 170 מעלות
אופים 15 דקות מוציאים, מרססים נייר אפייה ומניחים מעל הבסיס הזהוב שהוצאנו מהתנור.

כעת כשנוצר לנו נייר למטה ונייר למעלה.

הופכים על השיש שהנייר העליון שעכשיו הנחנו, יהיה למטה והתחתון שאיתו אפינו יהיה למעלה.

מסירים בעדינות את הנייר העליון ומניחים במקומו מגבת מטבח ולתת להתקרר.

בנתיים מקציפים שמנת מתוקה מוסיפים את שתי כפות אבקת הסוכר ואת שתי כפות פודינג הווניל.

מביאים לכדיי קצפת נעימה ויציבה ומוזגים פנימה כפית מחית ווניל.
מורחים את הקצפת  על הבסיס שהתקרר באופן שווה על כל הבסיס.

מפזרים כמעט את כל אגוזי המלך המרוסקים.

(משאירים קצת בצד כדיי לבזוק על הרולדה לאחר הציפוי)

מגלגלים לרולדה ומכניסים לתבנית אינגליש קייק.

עוטפים בנייר אלומניום ולהקפאה לשעתיים.
לאחר שהרולדה נחה במקפיא כשעתיים,

מכינים את הגנאש המושלם:

200 גרם שמנת מתוקה בקערת זכוכית למיקרו לשתי דקות.

מוציאים ומכניסים פנימה לקערה את 400 גרם השוקולד הלבן

מערבבים טוב טוב הרבה זמן עד לקבלת מרקם אחיד ולבן.

כשכל השוקולד נמס ומעורבב היטב, מוסיפים כף דבש לקבלת ברק מושלם.

ואז יוצקים על הרולדה הקפואה.

בוזקים מעל את אגוזי המלך שהשארנו בצד.

מחזירים למקרר לשעתיים ואז אפשר להוציא, לפרוס, להגיש ולהתענג לצד אספרצ’ינו.
