עוגת בוואריה

להכנת הקינוח המושלם שכיכב בשנות השמונים נזדקק ל:

מיכל גדול של שמנת מתוקה -500 מיליגרם (בהמשך יש מיכל נוסף)

כפית תמצית ווניל

כף ג’לטין

חצי כוס חלב

שתי כפות סוכר (בהמשך יש עוד סוכר)

5 חלמונים

מיכל גדול של שמנת מתוקה (כן זו לא טעות, במתכון  יש שני מיכלים גדולים של שמנת מתוקה שנזדקק להם בשלבים שונים)

חבילת בישקוטים

אגוזי מלך מרוסקים

סירופ שוקולד (קונים מוכן זה בא בבקבוקון כמו מייפל)

ונעבור להכנה:

 

נכניס לסיר קטן  מיכל אחד של שמנת מתוקה ונחמם על הגז כמעט עד רתיחה.

נוסיף לו כפית תמצית ווניל נערבב ונסיר מהגז.

ניתן לזה להתקרר מעט ובנתיים נניח 5 חלמוני ביצה בקערה, נוסיף שתי כפות סוכר ונקציף במקצפת ידנית עד לקבלת מרקם צהבהב חלק.

נשפוך את השמנת המתוקה עם הווניל שמעט התקררו לתוך קציפת החלמונים ונערבב לכדיי  לבלילה אחידה.

כעת נניח על הגז סיר קטן עם מים, נביא לרתיחה ומעל נניח סיר גדול אליו נשפוך את בלילת השמנת והחלמונים. נערבב עם כף מעץ כל הזמן עד קבלת מרקם מעט סמיך.

נסיר מהגז, נוסיף את כף  הג’לטין ונערבב טוב טוב לסמיכות הבלילה.

ניתן לזה לנוח להתקרר ונעבור למיקסר.

לקערת המיקסר נכניס מיכל גדול של שמנת מתוקה, שתי כפות סוכר, ארבע כפות אינסטנט פודינג ווניל ונקציף עד קבלת קצפת יציבה.

נכסה בניילון נצמד ולמקרר לשעה.

כעבור שעה.  נעשה השוואת טמפרטורות בין הבלילה שהספיקה להתקרר ולקצפת היציבה.

נקפל זו בזו ונביא לקרם אחיד וחלק.

נחזיר למקרר ונעבור להרכבת עוגה.

בתבנית מלבנית עם חישוק רינג

נניח שתי חבילות בישקוטים זה לצד זה.

נכין כוב נס קפה ללא חלב ועם כפית סוכר. נבריש רת כל הבישקוטים בנס קפה.

לאחר שכולם שתו נס ניצק פנימה את הקצפת.

ניישר יפה למעלה נעטוף בניילון נצמד ולמקרר ללילה.

למחרת, נקשט בסירופ שוקולד קנוי ומעל נבזוק אגוזי מלך מרוסקים.

נפרוס ונגיש להתענג עד מאה ועשרים.
