לרחת לוקום יש מליון מרקמים, תוספות, צורות הכנה, טעמים ואכויות.

אז הרחת לוקום שבמתכון הבא, הכנתי לראשונה ויצא לי לא פחות ממושלם.

המרקם הנעים שלא נדבק לשיניים, המתיקות המלטפת שלא חונקת והטעם? נדיררררררר

כמה פשוט ככה מושלם.

מעט מצרכים, הכנה קלה והתוצאה  פשוט מטורפת.

ראשית ניקח סיר קטן או קלחת, נניח על הגז, נדליק  ואליה נכניס:

3 כוסות סוכר,

3 כוסות מים

5 גרגרי מסטיקה טחונים דק (ניתן למצוא בחנויות תבלינים או בשווקים נתניה / שוק התקווה ואם לא מצאת מסטיקה- לא נורא)

כפית מיץ לימון ונערבב עד רתיחה.

כשמבעבע, ננמיך את האש ונבשל כרבע שעה.

נסיר מהאש ונניח בצד (חשוב לסגור עם מכסה)

בסיר אחר מעט גדול יותר, נניח על הגז, נדליק ונכניס פנימה:

כוס קורנפלור

1/2 2 כוסות מים ולערבב כל הזמן עד שאין גושים בכלל והמרקם חלק כמו חלב.

ממשיכים לערבב על להבה בינונית עד שהכל מסמיך ונהיה במרקם של חומוס.

בשלב הזה מוסיפים לאט לאט מהסירופ שהכנו קודם.

כל פעם מוזגים קצת ומערבבים לבלילה אחידה.

כשכל הסירופ התמזג עם בלילת הקורנפלור. מערבבים ומנמיכים לאש נמוכה, מבשלים כ-50 דקות ומידי פעם מערבבים שלא יידבק או התייבש.

כעבור 50 דקות מוסיפים פנימה

2 כפות מי ורדים

כפית תמצית ווניל

אני הוספתי בשביל הצע ומעט טעם – סירופ מלבי אבל לא חובה

ו- 200 גרם פיסטוק חלבי מקולף.

מערבבבים טוב טוב ומכבים את האש.

לוקחים תבנית פיירקס או אחרת בגודל 20X15

מניחים נייר אפיה ומרססים בספרי שמן.

מפזרים פיסטוק על כל תחתית התבנית ומעל יוצקים את בלילת הרחת לוקום.

מצננים 4 שעות (חשוב מאוד לא פחות מ 4 שעות)

לאחר ארבע שעות

מפזרים על משטח עבודה או קרש חיתוך. כוס אבקת סוכר וחצי כוס קורנפלור.

מערבבים לאבקה אחידה.

הופכית את תבנית הרחת לוקום על אבקת הסוכר.

חוצים עם סכים חדה וחלקה את כל הרחת לוקום ויוצרים קוביות.

עוטפים כל קוביה באבקת הסוכר והקורנפלור.

מניחים בקערה או תבנית ומכניסים למקרר.

אפשר להגיש מייד אבל למחרת אחרי לילה במקרר זה הרבה יותר יציב וטעים.
