לא מעט גירסאות יש לקוסקוס ולמרקים שלידו או עליו.

זה האהוב עליי ביותר:

ראשית נשרה  בקערה מחלאה מים חצי קילו חומוס עם כפית סודה לשתייה וכף גדושה כמון .

נכסה בניילון נצמד לילה לפחות.

למחרת בבוקר אפשר להתחיל.:

קילו בשר כתף / גולש / כבש חתוך לקוביות.

3 קישואים

שני בטטות

שלושה תפוחי אדמה

שלושה גזרים

3 בצלים

כ- 15 שיני שום

חתיכת דלעת

גבעולי סלרי

צרור פיטרוזיליה

שני פלפלים ירוקים חריפים

כמון

קינמון

פלפל  לבן טחון

כורכום

חווייג" למרק

מלח

ושמן.

כשהכל מוכן מתחילים.

ראשית מעט שמן לסיר גדול בו נבשל את התבשיל.

נטגן ונסגור את קוביות הבשר מכל הכיוונים.

לאחר שהחליפו צבע לאפור, נוציא לקערה נכסה ונמשיך הלאה.

נקלוף את כל הירקות ונחתוך לקוביות בינוניות. חשוב שלא יהיו קטנות מידיי וגם לא מפלצות.

אחרי שהכל חתוך ומוכן בקערה.

נקצוץ דק את הבצל, פלפל חריף, פטרוזיליה  ואת השום ונטגן על אש בינונית עד לריכוך מלא.

לאחר שהתרכך, נוסיף:

כף גדושה כמון, כפית קינמון, כפית חוויג' למרק, כף מלח, כף פלפל לבן,  וכפית כורכום.

נערבב עם כף מעץ ונקפיד שלא יישרף.

נוסיף  את הסלרי ושתי כוסות מים ונערבב כל הזמן.

כשרותח, נוסיף פנימה את כל הירקות החתוכים ונכסה במים.

כשרותח נוסיף פנימה את הבשר ומעליו את החומוס המסונן ללא המים שלו.

נביא לרתיחה, נמשיך על אש גבוהה כמחש דקות ואז ננמיך להבה להכי קטנה למשך 3 שעות.

מידי פעם נציץ שלא נגמרו המים, במידה וחסר מים נוסיף כוס מים רותחים.

כעבור כשלוש שעות, נוציא חומוס אחד ונוודא שרך מספיק כמו שאנחנו אוהבים.
