קובה חמוסטה בעיני הוא הקובה המושלם, עשיר וטעים שיש.

ההכנה שלו דורשת דיוק ולא מעט שלבים, אבל התוצאה שווה כל רגע.

מרק עשיר עם הקובה בפנים כשהוא רך ונימוך בפה, טעמי הבשר עם הבצל שמתגלה לאחר הביס…זה עונג נדיר.

אז ראשית נכין את המצרכים שמתאימים להכנת -24 יחידות.

500 גרם בורגול דק דק

300 גרם סולת

150 גרם מרגרינה

קילו בשר בקר חתוך לקוביות (אני השתמשתי בצלעות אונטריב ויצא מושלם, אבל אפשר כתף או צוואר יוצא מעולה)

5 בצלים קצוצים דק

צרור עלי סלק (מנגולד) קצוצים דק

צרור גבעולי סלרי קצוצים דק

צרור בצל ירוק קצוץ דק

25 שיני שום קצוצים דק

2 עדבניות קצוצות דק

400 גרם דלעת חתוכה לקוביות קטנות

3 קישויים חתוכים לקוביות קטנות

2 גזרים חתוכים לקוביות קטנותפלפל חריף קצוץ דק

לימון

שמן

מלח

4 כפיות פלפל שחור

4 כפיות חוואיג' למרק

שתי כפיות כורכום

כפית מלח לימון

סיר גדול ומלא אהבה.

מתחילים:

ראשית אני אוהב להכין הכל שטוף, מוכן, קצוץ ויפה שיהיה נוח לעבודה:

.

הדבר הראשון זה להשרות את הבורגות בתוך קערה עם מים כשהמים מכסים בשני סנטימטר את הבורגול

מכסים ונותנים לזה לספוג את המים בערך שעה.

בזמן הזה עוברים להכנת המילוי:

לוקחים את קוביות הבשר, שוטפים ומכניסים לסיר עם מים לרתיחה ולאחר מכן בישול על אש נמוכה כשעה ו-45 דקות. לא פחות כי הבשר חייב להתבשל טובטוב.

לאחר שעה ושלוש רבעי. מוציאים את הבשר על קרש חיתוך ועם סכין חדה קוצצים הכי דק שאפשר ( לא מומלץ במעבד מזון זה עושה את הכל עיסתי מידיי)

מניחים בקערה וממשיכים לשלב הבא בהכנת המלית:

לסיר נקי עם שלוש כפות שמן מכניסים 3 בצלים קצוצים דק, עגבנייה קצוצה דק, רבע צרור גבעולי סלרי קצוצים דק ואת הפלפל החריף שקצוץ דק ומטגנים עד לריכוך הירקות.

לאחר שרוכחו נוסיף :

כפית כורכום, כפית חוואיג' למרק, כפית פלפל שחור, כפית מלח, כפית מלח לימון ונערבב טוב טוב שהתבלינים יפתחו טעמים.

כעת נוסיף פנימה את הבשר הקצוץ ונערבב שייתמזגו הטעמים.

כעבור 5 דקות נכבה את האש ונוציא את המלית על קשר חיתוך.

נקצוץ דק דק את כל המלית ונניח בקערה בצד לנוח.

כעת נחזור לבורגול שלנו.

נוסיף לקערת הבורגול 150 גרם מרגרינה מומסת ו-300 גרם סולת ונלוש בידיים לקבלת בצק במרקם של פלסטלינה.

נשחק איתו הרבה עד שהכל יהפוך לבצק אחיד, נכסה וניתן לזה לנוח כשעה

עכשיו נתחיל להכין את המרק שהקובה שלנו ישבו בתוכו.

ראשית נכין את כל הירקות  והתבלינים שלנו כשהם מסודרים בקערות נפרדות על פי שלבי הבישול:

תחילה לסיר גדול ונקי נמזוג חצי כוס שמן ואליו נכניס את הבצל הקצוץ, נטגן עד לריכוך הבצל.

כעת נוסיף לסיר את עלי הסלק, הבצל הירוק, הסלרי והעגבנייה כשהכל קצוץ דק

נערבב כל הזמן ושוב נביא לידי ריכוך מלא של הכל.

עכשיו נוסיף לסיר את הדלעת, קישואים ואת הגזרים החתוכים ונערבב בעדינות.

כעבור שלוש דקות של ערבוב, נוסיף מים עד לגובה של 3/4 מגובה הסיר.

נביא לרתיכה ואז נוסיף תבלינים :כורכום, חוואיג' למרק, פלפל שחור, ומלח. נערבב טוב טוב.

ונבשל על אש קטנה כחצי שעה

כעבור חצי שעה נפתח את מכסה הסיר, נסחט פנימה לימון, נכסה ונמשיך לבשל עוד עשרים דקות.

כשהמרק על האש, ניגש להכין את הקובה שלנו:

וכמו שאני אוהב להכין נקי ומסודר אז מכינים קערה עם המלית, קערה  עם בצק הבורגול וקערה עם מים.

נרטיב את הידים בקערת המים, ניקח מהבצק ונכין כדור בגודל ביצה, נעשה בו חור עם הבוהן ונשתדל שהדופן תהיה דקה ככל שנוכל. נמלא את הבור במלית הבשר, נסגור לאט ויפה ונניח בצד. כך עד שנסיים להכין את כולם

כעת כשהמרק מוכן נתחיל להכניס פנימה את כל הקובה לתוך המרק בעדינות

לתת להם להמשיך להתבשל במרק עוד חצי שעה וזהו…זה מוכן.

ניתן לכבות את הגז. לתת להם לנוח ולשתות. בכל זאת הם עבדו קשה ומגיע להם לנוח (ככל שהם ינוחלו יותר זמן במרק, טעמם ישתבח ויהיה עשיר יותר.
