בשלב הזה  נרתיח סיר עם מים, כף מלח ו-8 שיני שום קצוצות (זה משדרג את טעם הציפס לרמה שלא תאמינו.)

נמתין עד שהמים ירתחו

נכניס פנימה את תפוחי האדמה שלנו.

ניתן לזה להתבשל 20 דקות עם מכסה סגור.

לאחר 20 דקות

נוציא עם גף מחוררת לתוך מסננית

ונשטוף עם מים קרים שלא ימשיכו להתבשל.

נשאיר אותם במסננת שיגירו את כל המים וכשמתקרר  נכסה עם מגבת ונכניס למקרר  לשעתיים.

כעבור שעתיים נמלא מחבת עמוקה או סיר בשמן עמוק, נחמם טוב טוב ונכניס את תפוח האדמה לטיגון ראשון.

נכניס ראשית צ’יפס אחד לשמן וכשהוא צף סימן שהשמן בטמפרטורה הנכונה

ואפשר להכניס כמה ביחד ולהתחיל לטגן.

חשוב מאוד לנקות עם מסננת קטנה את החתיכות הקטנות שבשמן, הן נעשות מטוגנות מהר ונשרפות עד שהופכות מרירות לכן חשוב בכל טיגון לעבוד כל הזמן עם מסננת קטנה להוציא שאריות.
