פלפל  ירוק ממולא, זוקיני ממולא ולבבות ארטישוק ממולאות.

לכל הירקות ההלו משתמשים באותה מלית.

המצרכים והכמויות מתאימות להכנת כ- 8 פלפלים, 6 זוקיני ו- 5 לבבות ארטישוק:

נתחיל עם המלית:

ניקח קערה גדולה אליה נכניס:

חצי קילו בשר טלה /  כבש / בקר טחון

חצי קילו אורז עגול שטוף טוב טוב מסונן – לא מבושל

2   בצלים מגורדים במגרדת שנסחט מהן את כל הנוזלים

ארבעה שיני שום כתושים

100   גרם צנוברים

חצי צרור פטרוזיליה קצוצה דק דק

שלושה גבעולי סלרי קצוצים דק

עגבנייה מגורדת

ארבע פרוסות לחם עדיף מההקפאה או מאתמול, ללא ה"קשה" רק ה"לבן" להרטיב במים ולסחוט ואז להכניס לבלילה.

כפית קינמון

כפית פפריקה חריפה

כף מלח

כף פלפל שחור

מיץ  מלימון סחוט

2   כפות גדושות של נענע יבשה – לא לוותר מוסיף המון לכל ממולא ולבצל בעיקר

ו – חצי כוס שמן

לערבב את כל המרכיבים בקערה לעיסה אחידה, נכסה בניילון נצמד ולהכניס למקרר.

כעת נעבור לירקות:

ניקח פלפל ירוק, נחתוך את אזור הגבעול עם סכין.

ננקה את ה"לבן" כם כף לקבלת פנים הפלפל נקי ככל שניתן.

ננקה גם את הזוקיני, נחתוך לשניים מהאורך. ועם  סכין מגלענת עגולה נוציא ונרוקן את פנים הזוקיני. נשאיר דופן דקה ויפה.

את לבבות הארטישוק אם זה סנפרוסט או מקופסאות שימורים זה גם יוצא נהדר אין צןורך בארטישוק טרי.

לאחר שניקינו את הירקות ושטפנו היטב.

נוציא את המלית מהמקרר ונתחיל למלא.

לאחר שמילאנו הכל והנחנו בצד.

ניקח סיר נמוך  ( סוטאז' )

נשפוך פנימה כף שמן.

לאחר מכן נחתוך, ננקה, נשטוף ונפזר בתחתית הסיר:

5 גבעולי כרישה

2 גזרים

פלפל חריף

5 שיני שום

שני תפוחי אדמה.

כל הירקות הללו אמורים לשמש כתחתית לממולאים שלא יישרפו, אבל הם לא פחות טעימים מהממולאים…

לאחר שסדרנו ויישרנו את תחתית הסיר עם הירקות החתוכים.

נסדר את הממולאים, צמודים אחד לשני ככל שניתן.

נכסה עם מכסה ונעבור להכנת הרוטב:

בקערה גדולה נכניס:

5 כפות רסק עגבניות

כוס רכז רימונים

5 שיני שום כתושות

אגוז מוסקט מגורד ממש מעט

כפית מלח

כפית פלפל שחור

כפית קינמון

ליטר מים חמים

נערבב טוב טוב לרוטב אחיד

נמזוג את כולו מעל הממולאים .

נניח את הסיר על אש גבוהה עד לרתיחה. ואז נוריד לאש קטנה….כשעתיים וחצי עם מכסה.

כעבור שעתיים וחצי, נסיר את המכסה וניתן עוד חצי שעה.

לאחר מכן נעביר לתנור על מצב "גריל" בערך  220 מעלות . משהו כמו רבע שעה להשחמה קלה וקירמול של קצוות הירקות.

נוציא ונגיש  להתענג על ממולאים שבאמת ובתמים הם לא פחות ממושלמים.
