קמח תופח / קמח רגיל. סולת / בלי סולת, קוקוס / בלי קוקוס. אפייה ב-180 מעלות או אפייה איטית.

את העוגה בגרסה הזו תכננתי, בדקתי והכנתי היום בפעם הראשונה. התוצאה פשוט מדהימה.

יצאה לי עוגה כמו בקונדיטוריות בוטיק באוסטריה, שוויץ או גרמניה.

גבוהה, אוורירית, רכה בטרוף, טעימה להתעלף וניחוחות התפוז נודפים ממנה כמו הסתובבתי בשדה של הדרים.

אשתי אומרת שאם לענן יש טעם….זה זה.

אז ראשית למצרכים שמתאימים לתבנית “26 (קוגלהוף)

8 ביצים L

כוס ו-3/4 סוכר

כוס ו-3/4 מיץ תפוזים סחוט טרי

גרידת תפוז משלושה תפוזים

3 כוסות קמח תופח

3 כפות גדושות אינסטנט פודינג ווניל

כוס שמן

כפית תמצית ווניל

קמצוץ מלח

ומתחילים:

ראשית מפרידים את הביצים

לוקחים את קערת החלבונים ומקציפים טוב טוב.

תוך כדיי הקצפה מוסיפים את הסוכר לאט לאט…..ממש לאט זה עושה את הקצפת יציבה.

לאחר שהקצפת יציבה מוסיפים פנימה תוך כדיי הקצפה את החלמונים וממשיכים להקציף עם מהירות נמוכה.

כשהחלמונים נבלעו ונטמעו בקצפת מוסיפים כוס שמן וממשיכים בהקצפה.

כעבור דקה מוסיפים את מיץ התפוזים, ממשיכים להקציף ואז מכניסים פנימה את גרידת התפוז.

ממשיכים להקציף וכעת מכניסים פנימה את תמצית הווניל.

מקציפים לאט לאט ומכניסים את האינסטנט ווניל.

ממשיכים בהקצפה ולאט לאט מכניסים את הקמח התופח.

20 שניות נוספות של הקצפה ומוסיפים את המלח.

כמה שניות ממשיכים להקציף וזהו.

כעת עם לקקן מקפלים הכל לערבוב עדין לוודא שהכל בלילת קצפת אחידה.

יוצקים לתבנית (ללא שימון)

חוזר ואומר לא משמנים את התבנית!

יוצקים ומכניסים לתנור על 160 מעלות לשעה ורבע.

(לא טורבו. אלא אפייה. פס למעלה ופס למטה)

לא פותחים את התנור גם לא דקה לפני.

כעבור שעה ורבע מכבים את התנור, מייד מוציאים את התבנית.

מניחים מכסה / צלחת על התבנית והופכים בזהירות.

משאירים כך עד לקרור מלא של העוגה.

אם היא נפלה לצלחת / מכסה- מעולה.

במידה ולא. מעבירים סכין חדה בין העוגה לתבנית מסביב טוב טוב עד שמחלצים את העוגה מהתבנית.

נותנים לה צינון נוסף וכשהיא מגיעה לגמרי לטמפרטורת החדר. בוזקים אבקת סוכר,

פורסים ומתענגים.
