עוגיות ריבה

שאגב אצלנו במשפחה קוראים להם עוגיות “רבקה”

רבקה זו אחותי ובכל זמן נתון יש לה חבילת עוגיות כאלה בארון.

בכל אירוח הם הראשונות לצאת…….(בדרך כלל הן חוזרות לארון כמו שהן…..)

אז עם המון אהבה וסבלנות הכנתי ויצא לי……….לא דומה לקנוי.

הבעיה שלא ניתן לאכול אחד…זה באמת ממכר.

כמה פשוט ככה קל.

להכנת כ-60 עוגיות צריך:

3  כוסות קמח תופח מנופה

1   כפית אבקת אפייה

½   כפית מלח

½   כוס אבקת סוכר

1   כף  גדושה של קורנפלור

  100 גרם חמאת מומסת

  3/4 כוס שמן

1 כוס מים חמים

200 גרם ריבת תות שדה (ללא פרי- לבחור את הסוג הכי חלק שיש)

להכנת  הבצק:

לקערת המיקסר מכניסים את כל היבשים, מערבבים ואז מוסיפים  חמאה ושמן מוסיפים את המים ומעבדים לבצק רך וחלק, מכדררים לכדור ,

עוטפים בניילון  נצמד ולמקרר לשעה.

כעבור שעה, נוציא את הבצק מהמקרר,

נחלק לשלושה כדורים. נניח על משטח העבודה נייר אפייה עליו  נניח כדור בצק אחד.

על הבצק נניח עוד נייר אפייה ונרדד למלבן של  30X40 שזה בערך גודל של תבנית אפייה.

לאחר שרדדנו , נסיר את נייר האפייה העליון.

עם קורצן בגודל העוגיה הרצויה נקרוץ עיגולים (עדיף קורצן משונן, העוגיות יוצאות מדהים)

לאחר שקרצנו  את כל המשטח, נחמם תנור על 180 מעלות

ונכניס לאפייה קלה עד הזהבה ממש בהירה שלא יתייבשו.

אלו הן התחתיות של העוגיות.

כעת נכין את החלק העליון. (הטבעת)

נרדד כמו בשלב הקודם עם נייר אפייה מעל ומתחת לבצק.

נקרוץ גם את הבצק הזה בקורצן הקודם. אלא שהפעם נקרוץ עיגול  נוסף וקטן במרכז של כל עיגול.

(זה יהיה “החלון” שממנו תבצבץ הריבה  בהמשך)

גם את “הטבעות” הללו נכניס לתנור ונאפה קלות.

ממשיכים אותו דבר  עם שארית הבצק.

חשוב מאוד לדעת שבין כל עיגולי הבצק נשאר המון “בצק מיותר” שגם אותו נרדד ונכין עיגולים ו / או טבעות.

לאחר שאפינו “תחתית עוגיה” ועליונית לעוגיה.

נספור שיש כמות שווה. כי…”לכל סיר יש מכסה”

ומשאריות הבצק נכין בהתאם  תחתיות או חלק עליון.

(נניח יש 60 עיגולים, אז צריך שיהיה 60 טבעות)

לאחר שהכל אפוי ומוכן. לאחר שספרנו ויש כמות זהה של תחתית ו”טבעת”

נתחיל להרכיב את העוגיה.

עם כפית נניח מעט ריבה על תחתית הבסיס ומעליו נושיב את הטבעת.

לאחר  שלוש / ארבע עוגיות כבר תדעו במדויק את כמות הריבה שנוחה לכם.

כשסיימנו להרכיב את כל העוגיות והנחנו אותם על משטח עבודה אחד ליד השני ולא אחד על השני.

נבזוק בנדיבות אבקת סוכר מנופה על כולם.

נסדר בצלחת הגשה / מגש ונתחיל להתענג.

זה נשמר מעולה בקופסה אטומה עד 10 ימים מחוץ למקרר.

אבל זה תאורטי בלבד…….אחרי יומיים לא נשאר אחד.
