לאחר שגם זה הפך לקציפה, נערבב את קצפת בחלבונים בקציפת החלמונים ונביא לכדיי בלילה אחידה

עכשיו ניקח תבנית מרופדת בנייר אפייה נרסס מעט שמן ועליה ניצק את בלילת הביצים שלנו.

נכניס לתנור שחומם מראש על 180 מעלות עד הזהבה קלה (משהו כמו רבע שעה)

נניח מעל נייר אפיה ונהפוך על השיש,

נגלגל כשיש נייר מעל ונייר מתחת ונכניס להקפאה לרבע שעה

בזמן שבסיס הרולדה בהקפאה, נכין את הקצפת שלנו שגם תהיה המלית וגם המעטפת.
