לחמודה שלי, גורת המחמצת היקרה שהולכת לחיות עוד הרבה  שנים קראתי  עזיזה.

עזיזה בזכות האצילות שלה, בשל יופייה, עוצמתה והכוח שהיא מעניקה לכל בצק, לחם ומאפה.

היום אני הולך לספר לכם איך ליצור, לגדל , לטפל, להאכיל ולפתח מחמצת, או בשמה המלא…

נשמע מפחיד?

אתם לא מאלו שיגדלו מחמצת? מעולם לא חשבתם על זה? נשמע סיפור ארוך?

אם כך, קיראו את השורות הבאות. דמיינו את הלחמים שיכולים לצאת מהתנור שלכם ותבינו שמחמצת חייבת להיות בכל בית!

ראשית מצטיידים במלא אהבה, סבלנות, תשוקה ללחם הכי טעים בעולם ושלוש דקות פנויות בכל יום בשבוע הראשון, לאחר מכן דקה וחצי פעם בשבוע…זה הכל ויש לכם מחמצת.

רק לפני כן חייב לומר לכם, נשבע שלקח פי  שש יותר זמן לכתוב את התהליך והמתכון מאשר להכין את המחמצת.

אוקי אז אמרנו שלהכין מחמצת נשמע מלחיץ,  דורש אומץ, מקצועיות ונסיון? …שטויות במיץ עגבניות….קלי קלות בחיי.

אגב יש  בערך מליון וארבע גרסאות להכנת מחמצת.

קשה / חצי קשה / רכה / סוגי קמחים / טמפרטורות / מקרר / חדר / לערבב עם האצבע או  כף מעץ…משוכנע שכולן או לפחות מרביתן נכונות. הכל תלוי מה אוהבים ובעיקר ניסוי וטעיה, קריאה מרובה או במילים אחרות…

מה הכי נכון לנו !!!

אז קבלו מתכון שאצלי הוא עובד מעולה והלחמים יוצאים….פגז!!!

מוכנים? שנתחיל? יאללה.

מכינים:

 100 גרם צימוקים,

חצי כוס קמח מלא,

חצי כוס קמח לבן,

כפית דבש

וכוס מים חמים.

יום 1 – לקערה נכניס כוס מים חמים, כפית דבש ונערבב להמסת הדבש.

לאחר מכן נוסיף את הצימוקים וניתן להם לנוח במים החמים עם מכסה סגור בערך שעה.

כעבור שעה, נסנן את המים ונזרוק את הצימוקים.

לקערה נקייה נכניס חצי כוס קמח מלא וחצי כוס קמח לבן.

נמזוג 3/4 כוס מהמים של הצימוקים. נערבב טוב טוב עם כף מעץ עד לקבלת בלילת בצק אחידה.

נכסה עם נייר סופג ומעליו נכסה במגבת מטבח נקייה ומעט רטובה שתשרה לחות למחמצת שלנו.

כעת נכניס למקום נעים בטמפרטורת החדר, כמו למשל למזווה / ארון /  חדר פנימי – לחמש שעות.

כעבור חמש שעות נציץ על גורת המחמצת שלנו  שזה עתה נולדה כדיי לוודא שהתחילה לנשום לבד החמודה.

ברגע שמבעבע בעבוע קל ביותר גם הוא סימן טוב, נכסה  רק במגבת הלחה ונכניס למקרר עד למחרת, עדיף באותה שעה כי צריך בערך 24 שעות בין כל שלב.

יום 2 –  כעבור 24 שעות, הגורה שלנו בת יממה שיהיה בשעה טובה, נוציא אותה כי הגיע שעת האוכל שלה. כשמסירים את המגבת, לבדוק אם הצטברו נוזלים על פני המחמצת, במידה וכן, נשפוך אותם החוצה שלא יפריעו לשמרים להתפתח ולתסוס. ( כך בכל יום שכפותחים להאכיל אותה, אם יש נוזלים, מסירים אותם)

אם כן  מכינים מראש לפני שתתחיל ליבב שהיא רעבה, 3/4 כוס מים, (חלילה לא חמים שלא יהרוג לנו את השמרים  שגדלים לנו) כוס קמח לבן, רבע כפית דבש, לערבב הכל יחד לבלילה ולשפוך על המחמצת. נערבב שוב עם כף מעץ טוב טוב לבלילת בצק אחידה, נכסה במגבת לחה, ניתן לה שלוש או ארבע שעות מחוץ למקרר ואז נכניס למקרר עד למחרת….לילה טוב מחמצת יקרה שלי.

יום 3 – שוב באותה שעה כמו אתמול, מוציאים את הגורה החמודה שלנו מהמקרר, יוצקים עליה בלילה שעשויה מכוס קמח ו-3/4 כוס מים, מערבבים ומוזגים. מערבבים טוב טוב עם כף מעץ לבצק אחיד, מכסים במגבת לחה ומניחים לה לנוח שלוש או ארבע שעות בטמפרטורת החדר ואז למקרר עד למחרת…

יום 4 –  גם היום כמו אתמול באותה שעה נבצע את אותו התהליך, אלא שדקה לפני שיוצקים פנימה את בלילת המים והקמח, נוציא מגורת המחמצת כחצי מהכמות ו…נכון זה כואב אבל זה לטובת המחמצת…נוציא חצי מכמות המחמצת ונזרוק לפח, או שנעביר לחבר/ה, אח/ות, שכן/ה שימשיכו מפה עם מחצית המחמצת ויגדלו את שלהם. התהליך נועד לסייע למחמצת לגדול באופן טוב ועשיר יותר.

כאמור לאחר שהוצאנו מחצית מהכמות, מוסיפים את 3/4 כוס המים עם כוס הקמח (היום אפשר לפנק את הגורה ולהחליף את כוס הקמח הלבן בכוס קמח מלא. זה יעניק לה אנרגיות חדשות.

הוספנו, ערבבנו, כיסינו במגבת לחה, מנוחה בטמפרטורת החדר שלוש / ארבע שעות ושוב למקרר למנוחת הלוחם…היא עברה יום קשה היום.


יום 5- היום נפנק את המחמצת שלנו כי אתמול היה לה יום לא קל. לכן נאכיל אותה בכמות כפולה. כוס וחצי מים, שני כוסות קמח, חצי כפית דבש, נערבב טוב טוב וניצק למחמצת, נערבב טוב לקבלת בצק אחיד ונכסה עם מגבת לחה, כמה שעות בטמפרטורת החדר ואז למקרר. מחר הולך להיות יום חג ומשמעותי למחמצת שלנו.

יום 6- בשעה טוב ובמזל טוב, המחמצת הגיע לבגרות ובשלות, מהיום מותר לה לעשות דברים של גדולים….טוב לא ממש אבל כמעט….ראשית נוציא מהמקרר, נכין מראש צנצנת גדולה ואטומה, נחטא את הצנצנת לכדיי צנצנת עקורה (זה אומר שהעברנו אותה תהליך סטריליזציה של בישול במים  על מנת להרוג את כל הבקטריות,  לאחר מכן לייבש והיא מוכנה )

ונעביר את המחמצת למשכנה החדש בתוך הצנצנת שלנו.

מהיום ניתן לקחת מעט מהמחמצת להוסיף לקמח ולייצר לחמים בטעמים ותוספות שונות, אבל זה במתכון נפרד.

לפני כן חשוב לשמור על בריאות המחמצת ולהאכיל אותה אחת לשבוע. איך מאכילים? כמו שהאכלנו אותה מיום היוולדה ועד היום, רק ללא ההמתנה בטמפרטורת החדר, אלא אוכלים, ולמקרר לישון.

פעם בשבוע, 3/4 כוס מים, כוס קמח, לערבב טוב ולצקת על המחמצת, לערבב ולהחזיר למקרר עם מכסה אטום.

חשוב לדעת:

  • למחמצת יהיה קל להניב לחמים עם הטעם האהוב והמיוחד ולתפוח מהר וטוב יותר, רק כעבור חודש או מעט יותר.

אם בכל זאת רוצים להשתמש בהן לפני, מוסיפים ומחזקים את הלחם בשמרים.

  • לפני השימוש במחמצת, מוציאים מהמקרר כשעתיים / שלוש לפני תחילת העבודה איתה שתפשיר מטמפרטורת המקרר .
  • ניתן להאכיל את המחמצת יותר מפעם בשבוע במידה והשימוש שלכם הוא יותר מזה. אם כן אחרי כל פעם שתיקחו מהמחמצת, תאכילו אותה ב-3/4 מים וכוס קמח ובכל מקרה לא להרעיב את המחמצת יותר משבוע ללא "אוכל"
  • ניתן לשלב קמחים כמו שיפון או קמח מלא  כדיי להעשיר את הלחמים ועל הדרך זה אנרגיה מטורפת למחמצת שלנו שאוהבת קמחים אלו יותר מקמח לבן (אפשר לשלב קמחים זה יוצא מעולה)
  • אם לא יוצא לכם לאפות לחמים כל שבוע ובכל זאת אנחנו חייבים להאכיל אותה, מוציאים חלק ממנה ונותנים למישהו אחר שיאפה או יגדל אותה.
  • מחמצת שמורה שמאכילים ושומרים כמו שצריך כולל החלפת צנצנת או קופסה אחת לחודשיים שלושה, יכולה להישמר שנים רבות ואף טעמה משתבח ככל שעובר הזמן.
  • עדיף, רצוי ומומלץ להאכיל את המחמצת באותה שעה, באותו יום קבוע בכל שבוע. כך לא נשכח את היצור המדהים הזה שיניב לנו לחמים של התעלפותתתתתת.
  • השימוש במחמצת הוא במקום השמרים שאנו רגילים להשתמש, רק במינון שונה וכמובן עם תוצאות מדהימות. היחס והכמויות הן: 500 גרם קמח, 150 גרם מחמצת, מים ככל שנכנס ונספג עד שהופך לבצק הרצוי, מעט מלח וזהו. מתכונים מפורטים עם תוספות, צילומים ועוד…בהמשך.
