תבשיל זנב שור, מח עצם, חיטה  וכרישה.

ראשית ניקח את  500 גרם חיטה נשטוף טוב ונשרה בקערה עם מים.

עכשיו בסיר גדול שבו נכין את  התבשיל.

נכניס שש כפות שמן זית ונצרוב בטיגון את  זנב השור (כשהוא פרוס לחתיכות גדולות) וגם את מח העצם נטגן ונסגור משני הצדדים.

(ניתן להמיר או להוסיף בשר ראש / צוואר טלה / אסאדו

נוציא עם מלקחיים או מסננת כדי שכל השמן ישאר בסיר.

נניח את הבשר בקערה ונמשיך הלאה.

נחתוך דק 6 גבעולי כרישה ונטגן בסיר הגדול על אש נמוכה עד לריכוך מלא של הכרישה ממש מרקם כמעט של ריבה.

נוסיף רבע צרור פטרוזיליה, רבע צרור כוסברה ורבע צרור שמיר. הכל קצוץ דק דק ונוסיף לכרישה.

נערבב טוב שלא יידבק ונוסיף 6 שיני שום פרוסות דק ופלפל ירוק חריף גם הוא קצוץ דק.

נערבב הכל יחד  וכעבור 5 דקות נוסיף תבלינים:

כפית קינמון,

כפית כמון,

כפית פלפל שחור,

כפית פפריקה חריפה,

כפית פפריקה מתוקה,

ושתי כפות מלח.

נערבב טוב ונפתח את התבלינים שיוציאו מעצמם את המיטב.

נוסיף פנימה שלוש כפות רסק עגבניות, נערבב וכעבור דקה / שתיים נוסיף ליטר מים.

נערבב ונביא לרתיחה.

לאחר שרתח, נכניס פנימה את זנב השור ומח העצם.

נוודא שהכל מכוסה מים ומעל הבשר נכניס לסיר 4 תפוחי אדמה חצויים לאורך ושני בטטות פרוסים עבה.

נכסה גם את הירקות במים ונביא לרתיחה.

כשרתח נסנן טוב את החיטה ונוסיף פנימה לסיר.

נביא שוב לרתיחה ולאחר שרתח ננמיך לאש הכי נמוכה, נכסה עם מכסה ונבשל שלוש שעות.

חשוב מאוד  לבדוק  מידי פעם שיש מספיק מים ושהתבשיל לא מתייבש או נדבק לתחתית הסיר.

כעבור שלוש שעות אפשר לבדוק עם הבשר מוכן ובא לכם, לכו תתענגו.

אני בשלב הזה, מוסיף לסיר ביצים ומכניס לתנור על 100 מעלות לכל הלילה.
