גביניות שמרים, הן  הדבר האהוב עליי ביותר מכל עוגיות השמרים מכל סוג וצורה.

משחר ילדותי הטעם המיוחד שלהן מלווה אותי ותמיד בכל בית קפה והזדמנות…הן הבחירה שלי.

אז קבלו מתכון מנצח לאחת מיצירות השמרים המופלאות שיש בעולם הקונדיטוריה.

( אגב המתכון לבצק  זהה לבצק שמרים של סינבונים, עוגיות ועוגות שמרים כמעט מכל סוג  )

הכמות והמצרכים שבמתכון, מתאימים ל- 20 יחידות.

קדימה לעבודה:

ראשית נתחיל עם הבצק:

חצי קילו קמח מנופה

כף שמרים יבשים

שקית או כף משפר אפייה

שלוש כפות סוכר

רבע כפית מלח

חצי כוס שמן

כוס מים פושרים

לקערת המיקסר נכניס את כל היבשים מלבד המלח.

נערבב טוב ואז נוסיף את המים והשמן.

נלוש מעט כמה סיבובים במיקסר ואז נוסיף את המלח.

ניתן למיקסר לעבוד עשר דקות לא פחות.

כעבור 10 דקות נכבה ונכסה את כל המיקסר בניילון נצמד.

ניתן לזה לתפוח משהו כמו שעה.

 

כעבור שעה  נסיר את הניילון הנצמד, נפעיל את המיקסר לשלושה ארבעה סיבובים ונכבה.

נוציא את וו הלישה מהבצק, נטפח קלות על כדור הבצק להוצאת אוויר כלוא. נפזר מעט קמח בקערית המיקסר, נניח את כדור הבצק, גם מעליו נפזר מעט קמח ונכסה בניילון נצמד לשעה נוספת.

כשתופח יפה ועברה שעה. נוציא את הבצק מהקערה, נפזר קמח על משטח עבודה.

נחלק את הבצק לשישה כדורים.

נכסה במגבת וניתן שוב חצי שעה מנוחה לתפיחה נוספת.

אל תתעצלו, כל תפיחה נוספת מבטיחה עוגיות מושלמות יותר.

כעת להכנת מלית הגבינות:

לקערה גדולה נכניס:

חבילת מסקרפונה

גביע קוטג'

גביע קטן של שמנת חמוצה

250 גרם / גביע גבינה לבנה 5 או 9%

ארבע כפות סוכר

שתי ביצים

תמצית ווניל בערך כפית

3 כפות קורנפלור

וכפית סוכר ווניל

עכשיו מערבבים טוב טוב עם מקצפת ידנית לקבלת בלילה אחידה ללא גושים.

לאחר שהכל חלק מכסים ומכניסים להקפאה לחצי שעה.

כעבור חצי שעה, מוציאים מההקפאה, מניחים בצד.

ניקח כדור בצק, נרדד עם מערוך למלבן  בערך 30 סנטימטר על 20 סנטימטר

נחתוך עם סכין חדה ל -6 ריבועים בגודל בערך 10X10

במרכז כל ריבוע מניחים כף מבלילת הגבינות, בשלב הזה ניתן להוסיף צימוקים זה הולך נהדר עם גביניות. לאחר ששמנו במרכז את בלילת הגבינה. עם מברשת וביצה טרופה נבריש עם שולי הריבוע. ככל שהשוליים מרוחים יותר בביצה, כך יידבקו ויהיה נוח יותר לקפל.

אז אמרנו. מניחים גבינה, מברישים סביב וסוגרים כמו מעטפה את ארבעת הפינות של הבצק.

מרימים בעדינות ומניחים כל מעטפה כזו בתבנית מרופדת בנייר אפייה.

ממלאים תבנית ומברישים כל גביניה בביצה טרופה.

מכניסים לתנור שחומם מראש על 180 מעלות עד להזהבה יפה.

 

בנתיים מכינים סירופ:

כוס סוכר וכוס מים בקלחת או סיר קטן ומביאים לרתיחה, כשרותח ממשיכים עוד 10 דקות לתת לבעבע ואז הסירופ מוכן.

מוציאים ומברישים כל גביניה בסירופ הסוכר.

מניחים בצד ומכניסים תבנית נוספת לתנור עד שמסיימים לאפות את כולם ומגישים להתעלף מעונג.

כשמעט מתקרר ניתן להקפיא וכשרוצים, מוציאים, מחממים וזה יוצא כמו שעכשיו אפינו את זה.
