בייגלה ירושלמי  מטורף וטעים ברמות ממכרות

ניתן להכין עם קמח רגיל, הפעם החלטתי להכין עם קמח כוסמין.

אז ככה:

לקערת המיקסר נכניס כף סוכר,  שתי כפות שמרים, כוס מים פושרים ונערבב עם כף טוב טוב. נניח לזה להתסיס כעשר דקות.

כעבור 10 דקות נוודא שתסס

ואז נוסיף:

כוס מים פושרים ולערבב עם כף,

רבע כוס שמן ולערבב,.

3 כפות סוכר ולערבב,

כף מחוקה של מלח ולערבב.

 

עכשיו נוסיף קילו קמח כוסמין מנופה.

נחבר את וו הלישה של המיקסר ונתחיל ללוש 9 דקות.

חשוב לשים לב, אם מעט יבש ניתן להוסיף עוד חצי כוס של מים פושרים.

כשהבצק מוכן לאחר 9 דקות לישה, הוא יידבק לוו הלישה ויראה כך

נוציא, נעביר לקערה משומנת נכדרר לכדור בצק נעים ועליו נמזוג כף שמן ונכסה בניילון נצמד,

מעל מגבת וניתן לזה לתפוח כשעה.

כעבור שעה כשתפח,

נוציא מהקערה, ונחלק את כדור הבצק ל 16 כדורים.

מכל אחד נכין נחש באורך של 40 סנטימטר ונסגור את הקצוות, נניח בצד וכך מכינים את כל 16 הכדורים.

בקערה רחבה נמזוג שלוש כפות סילאן וכוס מים פושרים

לקערה רחבה נוספת נכניס:

3 כוסות שומשום, כוס קצח, 2 כפות סוכר וכפית מלח ונערבב.

כעת נחמם תנור על 180 מעלות

ניקח תבנית מרופדת בנייר אפייה

כל בייגלה נטבול בקערת הסילאן ולאחר מכן בקערה השומשום ונוודא שנדבק כמה שיותר מתערובת השומשום ונניח בתבנית.

כך נסדר כל תבנית

וכשהיא מלאה נכניס לתנור החם עד להזהבה (משהו כמו 25 דקות)

כשמוכן והזהיב יפה, מוציאים ומייד מניחים את הבייגלה על רשת כדיי שלא יזיעו מלמטה

מגישים, מנשנשים ומתענגים.

אגב כשמתקרר, ניתן ורצוי להקפיא וכשרוצים מחממים בתנור ויוצא מושלם (לדעתי אף יותר טעים )
